Chai Latte Cookies - Gluten Free

These are our Chemist's favorite in-house special dessert! Enjoy these with an iced latte in the summer or a hot cup of tea in the winter. These cookies are full of spice and everything nice (including our Delta 8 Chai Tea Latte Tincture). Gluten free and not too sweet, this is a perfect option for those who enjoy guiltless sweets as guilty treats. ;)
What you need for this recipe:
½ cup butter (softened)
½ cup coconut oil (softened)
½ cup brown sugar
½ cup granulated sugar
2 eggs
1 ½ cup almond flour
1 ½ cups gluten free OR all purpose flour
1 tsp baking soda
*Chai Spice Mix:
1 tbsp cinnamon
½ tsp all spice
1 tsp cardamom
¼ tsp cloves
½ cup butter (softened)
½ cup coconut oil (softened)
½ cup brown sugar
½ cup granulated sugar
2 eggs
1 ½ cup almond flour
1 ½ cups gluten free OR all purpose flour
1 tsp baking soda
*Chai Spice Mix:
1 tbsp cinnamon
½ tsp all spice
1 tsp cardamom
¼ tsp cloves
¼ tsp black pepper
240mg chai latte tincture (or 10mg per cookie)
To Roll Cookies In
1 cup brown sugar
*Chai spice mix
Servings - 24 cookies
How to make Delta 8 Chai Tea Latte Cookies:
- In a large bowl, stir together butter, coconut oil and sugars until fully combined.
- Beat in eggs, one at a time
- In separate bowl, whisk flour, baking soda, and chai spice mix
- Add dry ingredients to wet ingredients and stir until fully combined
- Place dough in fridge for at least 30 min to firm up before forming dough balls
- Preheat oven to 350F
- Mix together sugar and second chai spice mix in a small bowl to roll cookies in
- Roll dough into a ball in your hands, then roll each dough ball in sugar mix until fully coated
- Place cookies 2 inches apart on cookie sheet
- Bake about 10 min or until they have puffed and cracked
Drop the Chai Latte Tincture on top of each cookie once they have cooled. Add 10mg of tincture (1/2 dropper) to each cookie.
